Mutton reminds Japanese people of ‘Jingisukan’, Hokkaido’s local cuisine. Flavoursome and healthy lamb is increasing in popularity again, especially in the Greater Tokyo Metropolitan area. Hokkaido produces 70 % of all lamb meat in Japan. The nation’s entire lamb production only meets 1% of the Japanese market; therefore lamb is imported from overseas to satisfy demands. Due to this fact, lamb production is forecast to increase considerably in the future.
