There are two types of uni that you can get from Hokkaido, ‘Ezo-Bafun-Uni’ and ‘Kita-Murasaki-Uni’, which are recognized as being especially tasty. Despite the name, ‘bafun’ which means ‘horse dung‘,
Ezo-Bafun-Uni is rich in flavour and generally fetches a high price. Hokkaido’s local specialty is Uni Donburi, which is a plate of rice served with plenty of fresh and smooth uni. Bottled salted uni is popular as a side dish to go with sake.
