Fresh squid of Hokkaido is famous for its sweetness and chewiness
Yariika (Calamari) can be caught from March to June, and you can catch Surumeika, the common Japanese squid, from July to September. Japanese are the biggest consumers of squid throughout the world. This stems from the old times when the fresh squids sweetness and chewiness was cherished and appreciated just as it is today. Japanese love to eat Surume (dried squid), Ika Meshi (stuffed squid with rice) and Shiokara (salted, fermented tiny strips of squid) as processed food, and as sashimi. The night scene of Hakodate in summer is rather spectacular; the sight of Isaribi (lamps lit on squid fishing boats) adds a unique charm to the night scenery.
