‘Hime-Ezo-Bora’ is a variety of escargot which signifies the atmosphere and ambience of Hokkaido. Tsubu-Yaki, grilled in the shell, is a standard food on sale at street stalls and taverns; it is also popular as an ingredient for oden. Ezo-bora, which is also known as ‘Matsubu’ and is traded at a high price, is often used for sashimi and sushi. There are 10 kinds of tsubu. After the scallop and the mackerel, the tsubu holds third place in the Japanese seafood market.
