Scallop farming is a huge success in Hokkaido, and making scallop top of the list of marine produce in Hokkaido. The scallop adductors from the northern sea are wonderfully firm and rich in sweetness and flavour; suitable for dishes such as Sashimi and coquille, and other foods such as dried scallop adductor and Kunyu-zuke which is smoked then soaked in oil. The scallop is called ‘the honour of fish farming’ and to signify the importance of scallop farming there is a monument on the shore of the Lake Saroma proclaiming ‘The birthplace of scallop farming,’
