Various Hakodate style salt flavoured ramen classified by era!
The owner of this restaurant has traced the different flavours of Hakodate salt ramen noodles from the 1970s through to the new millenium, and has each recipe classified by the decade. He claims that the 1980s ramen is his own original recipe! The plain salt soup captures the flavours of the Kagome seaweed, whereas the “Ozeki” (pork and miso) flavour, based on the 1990s style soup, is served with a mountain of vegetables including Chinese cabbage and onions. The addition of fried onions as a topping gives the ramen a unique flavour, which can also be enjoyed in the Yunokawa restaurant.
